I LOVE beef stew, but don’t always have the time to stand at the stove to cook the meat and then add everything to the pot and stir it frequently so it doesn’t stick to the pot. So when I received the Cook Companion Wonder Pot to review, I just had to try out the simple beef stew recipe in their recipe book, but I made it my own. What makes this item and items like it so wonderful is that you can replace multiple kitchen appliances.
The way I changed the beef stew recipe.
I omitted the mushroom soup as my family doesn’t like mushrooms. I added about a tablespoon of Italian seasoning instead of Thyme. Instead of an onion, I used onion powder. I used 1 lb of beef stew meat instead of 2 lbs. frozen stew veggies, instead of fresh and I drained the tomatoes (my hubby doesn’t like tomatoes), so only about a 1/4th of the tomatoes got in the pot, all the juice made it in.
Simple Beef Stew Recipe – Serves 6 to 8
1 tablespoon extra- virgin olive oil
2-pounds stew meat, cut into 1-inch cubes
1 medium onion, diced
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 pound small red potatoes, peeled and quartered
2 celery stalks, cut into 1-inch pieces
1 cup beef stock
1 sprigs thyme
4 carrots, peeled and sliced into 2-inch pieces
1 can (14 1/2 ounces) diced tomatoes
1 can (10 3/4 ounces) golden mushroom soup
Select stew function on the Wonder Pot, with the lid closed, preheat for 5 minutes,
Add oil and heat for two minutes longer.
Brown beef chunks for 5 minutes.
Season beef chunks with salt and pepper.
Add beef stock, and remaining ingredients secure lid.
When cooking is complete, approximately 2 hours, remove the thyme sprig and serve
End Results over rice!
This was so delicious! I couldn’t believe that within 2 hours we had a good wholesome meal to enjoy! Had the entire house smelling so good, it was making us HUNGRY! LOL Easy to put away as well! Let the inner pot cool off, then put Saran Wrap over it and put in the fridge!
